In the spirit of Anzac Day, I have taken inspiration from the traditional chewy Anzac Biscuit and transformed it into this wholesome nutritive slice variation fit for the whole family. If you would love to learn more about why we commemorate Anzac Day simply click here.
Wholesome Anzac Slice Recipe
Prep: 15mins Cook: 10-12mins Serves: 15
- 1 cup Oat Bran
- 1/2 cup Rolled Oats
- 1/2 cup Coconut Flour
- 1/3 cup Organic Brown Sugar
- 150g butter
- 2 tbs Coconut Nectar
- 1 tsp bicarbonate of soda
Preheat oven to 160 degrees. Line a brownie tray with non-stick baking paper.
In a large bowl add coconut flour, oat bran, oats and sugar, stir together with a fork.
In a small saucepan, melt the butter, coconut nectar and 2 tablespoons of water together over a medium heat. Take off the heat and stir in the bicarbonate of soda to form a froth.
Pour the wet mixture into the dry mixture and combine well using the back of a fork.
Place the ingredients into the lined tray and press down firmly using the back of a fork or spatula until evenly spread.
Bake for 10-12 mins or until golden brown.
Allow to stand/cool in the tray for 15mins to avoid falling apart. The slice will be mouth watering soft however more crumbly so handle delicately.
