A winter favourite and a hearty meal to keep you feeling full of energy. I created this recipe for my Winter Wellness Group I am nutritionally coaching and they LOVED it, so it warrants a feature.
Lupin Flakes are a very versatile legume to cook with and if I am using it then it is without a doubt packing a punch of health benefits♥
Time to make a nutrient dense GingerNotes Lupin Lasagna!
Turkey Lupin & Veg Lasagna Recipe
Serves | 8
- 1kg Turkey Mince (or alternative)
- 3/4 Jar Passata Tomato Puree (no added sugar)
- 1 medium eggplant, 1 cm slices
- 1 medium sweet potato, 1 cm slices
- 2 cups cauliflower, finely chopped

- 1 cup vintage cheddar cheese
- 1 tsp cumin seeds
- 1 tsp all spice
- 1 tsp ginger
You will need a good sized casserole dish or non stick tray.
Cook the turkey in a drizzle of Extra Virgin Olive Oil + spices & passata sauce then allow to simmer while you prep your veg.
Layer casserole dish:
- Thinly sliced eggplant
- Sliced sweet potato
- 1/3 cup Lupin flakes
- ½ pan of turkey mince
Final layer is any remaining veg then cauliflower, 1/3 Lupin flakes and final top with cheese.
Bake on 180 fan forced 50mins.
TIP: Serve with additional greens & squeeze of lemon juice using dinner as an opportunity to boost your leafy veg.
