Isn’t Summer our favourite season of the year? When the sun is beaming and the water is icy fresh. It is also the time when the temperature change also influences the type of diet we are likely to consume.
We tend to crave refreshing foods, often raw, and the creative salads & juices become an everyday feature. The oven gets forgotten and the BBQ is the go-to chef buddy for the hot summer nights. No, this is not a romance novel but the next few raw vegan recipes are sure to make you feel those healthy clean food vibes.

1. Grapefruit Mocktail
1 pink grapefruit, juiced
10 mint leaves
250ml coconut water
1 cup ice, additional water if needed
Blend all ingredients together and serve chilled.
2. Peach, Mint & Cashew Salad
2 cup spinach & rocket mix
1 peach, sliced
10 mint leaves
1 Tbsp cashew nuts
1/4 lemon, juiced
Arrange on your plate in order of ingredients list, finishing with a squeeze of lemon. Enjoy the bursting flavour of our summer stone fruits.
3. Dreamy Blackberry Ice-Cream
1 young coconut, flesh & water removed
1 packet blackberry (or any other berry)
1 banana (optional)
Ice & additional water if needed
Blend all ingredients and transfer into silicon moulds or container and pop into the freezer to set for 3-4hrs. Scoop your heart out with the delicious creamy coconut berry magic.

5. Vegetable Wraps
3 large Cos lettuce leaves
1 Tbsp mixed seeds (create your own in a jar with sesame, poppyseed, sunflower & pumpkin)
1/4 Red Capsicum
1/4 Yellow Capsicum
1/2 Lebanese Cucumber
1/2 Lime, juiced
Cut the capsicum and cucumber into thinly sliced strips and then build each cos lettuce leaf with equal amounts of mixed seeds & veggies. Squeeze over the lime juice and season with additional herbs and spices as desired. Summer Sensation!
