Have you ever had a soup that just needed a little sweetness to enhance the flavours. Curry is often complimented with sweet foods such as currants, coconut milk and mango so I thought I would try adding something into my carrot and curry soup to complete the picture. A little note about this particular reduction, the vinegar is sourced from Modena Italy and barrel-aged for 5 years – that is both impressive and passionate. The company is very authentic in their business, looking to provide healthy products for people to enjoy while keeping the traditional flavour. The vinegar is blended with organic coconut sugar to create the aromatic nectar notes that happened to compliment my curry flavours perfectly. So really I made a VERY good choice and hence the taste…robust and rich as well as heart and delicious.

Sweet Carrot & Curry Soup
Prep: 10mins Slow cook: 4-6hours Serves: 6
- 3 cups carrot
- 1 brown onion
- 3cm ginger root
- 5 garlic cloves
- 1 tbs olive oil
- 1 tbs Organic Sweet Balsamic Reduction
- 2 tsp curry powder
- 1 tsp garam masala
- 1 tsp Himalayan salt
- 2.5 L water
For this soup recipe I have used a slow cooker, it makes things very simplified with prep and the smell through the house WOW.
Just add water, oil, balsamic reduction and all of the dry powder ingredients and give a stir through.
Add the chopped carrot, onion, ginger and garlic and make sure water is covering all of the ingredients, if not add more until covered.
Leave for 4-6 hours or until soft and then use a barmix stick blender to puree all ingredients until a thick soup texture.
Serve with mint leaves and your favourite crusty wholemeal grain bread.
