When you are looking for a healthy snack to complement your favourite herbal tea, this recipe is perfect!
I have kept the carbohydrates naturally wholefood sourced and to a minimum using just a few Medjool dates for sweetness. I have amped up the protein for slow release energy with a good quality powder, nuts & seeds. Snacks can be a difficult decision, especially for busy workers and exhausted mums, however this is a simple healthy choice that the whole family will enjoy.
Feel free to swap the green to purple (acai, blueberry or maqui powders) and alternative seeds if your wish (chia, sesame).
Lets get BLITZ’n…
Raw Green Protein Balls Recipe
- 1 cup raw mixed nuts
- 1 Tbsp pumpkin seeds
- 1 Tbsp sunflower seeds
- 4 Medjool dates, pitted
- 1/2 lemon zest
- 1/4 cup 100% plant based protein powder (I have used sprouted brown rice)
- 1 heaped tsp Synergy Super Greens Powder (Or your favourite alternative)
- 1 Tbsp Coconut Oil
- pinch Himalayan Salt
- (additional water may be needed)
Place nuts & dates into a jug and fill with boiling water for a few minutes.
Strain off water and place nuts & dates into a processor along with all the remaining ingredients. Blend until it forms a dough-like consistency, NOTE* if this does not happen after 40 or so seconds, add a dash of hot water whilst processor is on to give it a little more moisture to bind.
Roll into even ping pong balls and place into the fridge to set for a few hours.
