Behold the biscuit made out of Pepitas & Protein !!
As a Nutritionist, Mum & Boss lady – I am in need of some solid healthful energy loaded with nutrients essential to a busy womens health.
We are talking about IRON !!
I was deficient during both my pregnancies (I have never been a big red meat eater – is this the problem or a bioavailability issue I wonder hmmm??). With that in mind I decided to start getting innovative with the way I eat the foods containing Iron, like the plant sourced PEPITAS or commonly known as Pumpkin Seeds.
So ladies…are you getting enough Iron in your diet? Time to bake these biscuits ♥
Gluten Free Pepita Protein Biscuit Recipe
- 1.5 cups Bob’s Red Mill Gluten Free Flour
- 2 Tbsp Protein Powder (I have used At Health 100% Natural Whey Vanilla)
- 1/2 tsp Bicarb soda
- 1/2 tsp Ginger
- 1/2 cup Pepitas (pumpkin seed) Spread (Tahini or 100% Nut Butters are also great)
- 1/3 cup Honey
- 2 Tbsp Extra Virgin Olive Oil
additional pepitas to decorate
Preheat fan forced oven to 170° and line a baking tray with paper.
Mix all ingredients together or you can just use your hands to rub mixture until well combine. If it appears too dry, add additional seed/nut butter.
Roll even balls, add some seeds on top and press down with palm of your hand onto baking paper. Bake for 12 minutes or until slightly golden.
The biscuits will resemble a shortbread consistency packed full of vital nutrients.
