I know pancakes can taste fluffy and delicious smothered in butter and maple syrup from your favourite little corner cafe and you should still enjoy having those on special occasions. What about when you just want an everyday pancake that is going to nourish your body, lift your mood and satisfy the pancake crave. Give this flour less pancake recipe a go, they are really quite moorish and with no added sugar or refined bleached flours you have a guilt free and nutritionist approved option.
No Flour Pancake Recipe
Prep: 5mins Cook: 5-8mins Serves: 1
- 1/4 Oat Bran
- 1 Egg
- 1 Medjool date
- Pinch of Cinnamon (optional)
Finely dice your date and place in a bowl with 2 Tbsp boiling water. Wait 2 minutes then add in your oat bran, egg and cinnamon and whisk with a fork.
Heat a non stick fry pan on medium heat and place 3 Tbsp of mixture if you want pikelet size. Cook for 1 minute each side or until firm.
Serve with thinly sliced banana or even a dollop of honey greek yoghurt.
