There is always time to experiment with fruits you have never cooked with before and today was the aromatic and tangy Passionfruit. “Passiflora edulis is a vine species of passion flower native to Brazil, Paraguay and northern Argentina”. Did you know the Macadamia Nut is native to north eastern New South Wales and central and south eastern Queensland – talk about incorporating local ingredients :).
I have created the perfect relationship between the macadamia nut and the vine ripened passionfruit to send you into that Healthy Melting Moment. This biscuit must be on your to-do list when you have the grandparents visit to delicately blow their lacy socks off.

Passionfruit is a good source of Vitamin A and also our antioxidant immune booster Vitamin C. Surprisingly you can also find a pinch of Iron in there too.
Macadamia Nuts are loaded with healthy fats and also a source of magnesium, iron and Vitamin B6 (involved in the process of serotonin synthesis and so assist with lifting your mood.
Macadamia Passion Biscuit Recipe
Prep: 15mins Cook: 12-14mins Makes: 20
- 1 cup Buckwheat Flour
- 1 cup Gluten Free Flakes (millet, quinoa, brown rice-I used Planet Organics Porridge)
- 1/2 cup Coconut Flour
- 1/3 cup Coconut Sugar
- 3 Passionfruit
- 1/3 cup Macadamia Nuts
- 150g butter
- 1 tsp 100% Vanilla Extract
- 1 tsp bicarbonate of soda
Preheat oven to 160 degrees. Line a tray with non-stick baking paper.
In a large bowl add flours and flakes and stir together with a fork.
In a small saucepan, melt the butter, coconut sugar over a low heat until melted. Add in the chopped macadamia nuts and passion fruit pulp and stir for 2 minutes. Take off the heat and stir in the bicarbonate of soda to form a froth.
Pour the wet mixture into the dry mixture and combine well using the back of a fork. Finally stir in your vanilla extract.
Form ping pong size biscuit balls and place onto your tray. Lightly press down with your hand to create even biscuits and bake for 12-14 mins or until lightly golden brown.
Allow to stand/cool in the tray for 5 mins and enjoy warm if you get the chance.
