Healthy snacks that offer good quality ingredients with functional benefits is what I love to create. This one has a fantastic protein profile from the Gluten Free Lupin flakes (read up on what lupin is here) and Eggs.
If you are looking for a lunchbox muffin that offers a variety of nutrients without the nuts, simply swap the almond meal for something like Buckwheat Flour, Oats or Wholegrain Spelt.
Not just for kiddies, this muffin recipe is a healthy option for pre or post workouts to reclaim your energy and ladies…you will tick the no added sugar box.
Lupin Veggie | High Protein
- 1 cup chopped Zucchini
- 1 cup pre-baked sweet potato (simply foil one up during one of your roasting dinner nights, approx 40 mins)
- 1/2 cup Lupin Flakes
- 1 cup plant-based calcium fortified milk (I have used Pureharvest Rice Milk)
- 2 Eggs
- 1 cup Almond Meal (or nut free alternative like Wholegrain Spelt, Buckwheat or Oats)
- 1 tsp Bicarb Soda
- Pinch Salt or Seasoning of your desire
Optional addition of 1/2 cup grated cheese will boost your calcium intake per serve
Preheat oven to 180° fan-forced and grease your mini muffin tray or use silicon molds.
Blend all ingredients together in a processor until well combined then fill your mini muffin tray generously.
Bake for approx. 25-28 minutes and allow to cool before removing from the tray.
