You know you have a winning recipe when your toddler cannot wait for the photoshoot to be over to gobble up the goodness. Both the adults and little ones did not leave a crumb on their plates when we enjoy the Lupin & Pecan Crumbed Pork Bites for dinner.
As a Nutritionist, using ingredients that have a high protein and fibre rich profile is a double win when recipe developing. Thanks to The Lupin Co for the amazing Lupin Flakes, I have transformed a meat ball into something scrumptious and simply nutritious.

Lupin & Pecan Crumbed Pork Bites Recipe
- 500g pork mince
- 1/3 cup Lupin Flakes (source your nearest lupin flakes here)
- 1/3 cup pecans
- 1/2 cup water
- 1 tsp nutmeg
- 1 1/2 tsp sea salt
- 1/4 cup onion, diced
- 1 cup cauliflower, finely diced
Preheat oven to 200C fan forced and line a tray with baking paper.
Create your lupin batter by blending the flakes, 1/2 tsp salt and pecans into a finer crumb. Place the lupin mix in a small bowl and stir in the water to form a batter.
In a separate bowl combine the mince, remaining salt, nutmeg and veggies. You are now ready to form ping pong sized bites and I found using my hands to coat the balls in the batter was the easiest method.
Place evenly on the tray and bake for approx 35 mins.
Serve with a fresh crispy cos lettuce salad, apple match sticks and squeeze of lemon.
