As a mother of two small children, we experience flu like symptoms with chesty coughs quite a few times per year. I thought there was no better time than the present to create a little immune boosting cookie recipe to support the respiratory system.
You may already be aware that a quality honey offers antibacterial properties and lemon is a well known antioxidant, so did you know thyme has been used as a lung remedy for many years? It has a long history of fighting bacterial infections, coughs, sore throats and other health benefits including boosting your mood.
Time to start experimenting with herbs by baking some Lemon & Thyme Macadamia Biscuits, the natural remedies have been around long before us!
Lemon & Thyme Macadamia Biscuits Recipe
- 150g Buckwheat Flour
- 1/2 cup Macadamia Nuts (I have used an Australian small business – The Activated Nut Company)
- 1/4 cup Raw or Manuka Honey
- 55ml Cobram Estate Lemon Infused EVOO
- 1 tsp Baking Soda
- 1 TBSP Apple Cider Vinegar (or white vinegar).
- 1 tsp Thyme
- pinch Sea Salt
Preheat oven to 160ºC fan-forced and line a baking tray.
Blitz your macadamia nuts into a meal and set aside.
In a medium bowl, whisk together the oil, honey, thyme, salt and then add the baking soda and vinegar.
Add in the flour and nut meal until well combined. The batter should come together in a ball and will be “oily” – add additional flour if your mix is too wet.
Place 12 even balls onto your baking tray and flatten down with the back of a dessert spoon.
Bake for 15-17 minutes or until edges begin to golden.
