Mint does not just ward off ants and flies but it also makes a fresh aromatic addition to recipes. Normally we would see mint tossed through a watermelon and feta salad (YUM !) but this time…a super family friendly dinner or lunch option.
Kale & Mint Chicken Patties are made with whole food ingredients and offer a great protein, plant fat and nutrient profile to keep your kids growing and your taste buds excited with this idea of “healthy eating”.
The hidden veg chicken pattie will also make a delicious burger option for a healthy weekend takeaway swap. You could serve them up with my Curry Potato Fries – CONGRATULATIONS…you have just become a chef ♥
On a more nutritional perspective, mint is great for promotion digesting, providing symptomatic relief to bloating, ingestion or inflammation. Mint is also a great palate cleanser or if you suffer motion sickness a very beneficial tea to have on hand.

Kale & Mint Chicken Patties Recipe
- 500g Chicken Mince
- 2 large Kale Leaves, stalk removed
- Generous Handful of Mint
- 1/3 cup walnuts
- ¼ cup EVOO (I have used Australian Red Island Extra Virgin Olive Oil)
- ½ tsp sea salt
- Optional to add ¼ onion and a few drops Lemon essential oil
In a processor puree the EVOO, kale, mint, walnuts and seasoning then mix in the chicken until well combined.
Cook small patties on medium heat with a drizzle of EVOO until browned each side.
Serve with a fresh salad, could be as simple as my Crunchy Snow Pea Salad Recipe with additional Cos Lettuce.
