I have created this Banana & Walnut Muffin Recipe to contain LESS carbohydrates, by swapping out half of the wholemeal spelt flour and replacing this with coconut flour & lupin flakes. This has then bumped up the protein & dietary fibre, making a wholesome snack fit for the family.

Healthy Banana & Walnut Muffin Recipe
Prep: 10 mins | Cook: 25 mins | Makes: 12
- 1/2 cup extra virgin olive oil
- 2 large eggs
- 1/4 cup water
- 3 large bananas
- 1/4 cup lupin flakes (What is this? Find out more here)
- 1/4 coconut flour
- 1/2 cup wholemeal spelt flour
- 1 tsp cinnamon powder
- 1/2 tsp ginger powder
- 1/2 tsp bicarb soda
- 1/2 cup crushed walnuts
Preheat fan forced oven to 180°c and case or grease a 12 muffin tin.
Add all ingredients (except for the walnuts & 1/2 of one banana) into a processor or thermomix and blitz for 30 seconds. Stir in the crushed walnuts with a spatula or spoon.
Slice your 1/2 banana into 24 – this wont take you long promise 🙂
Add half of the mix evenly into the muffin moulds and add a sliced banana to each. Repeat process and bake for 25 minutes or until cooked through the centre.
Serve with a Chai Tea
