This recipe is the most simple and healthy treat to bake, especially if you have a growing toddler stalking your every move in the kitchen.
Looking to reduce your refined flour intake…DONE in a blitz using flourless ingredients, fibre boosting oats and gluten free almond meal to become a more wholesome and nutritionally dense recipe for the whole family. Bananas are a great source of potassium (one very important electrolyte) and so affordable, thats a busy family tick from me.
Ready in under 20 minutes, you will be baking a big batch once you taste how moist and delicious they are!!
Flourless Wholesome Banana Muffin Recipe
Makes: 12 | Prep: 5 mins | Bake: 13 mins
- 1/2 cup Oatmeal
- 1/4 cup Almond Meal
- 2 Tbsp Flax meal
- 1 tsp Bicarb Soda
- 2 Large Ripe Bananas
- 1/4 cup Nut Butter (I have used Pic’s Peanut Butter)
- 1 Large Egg
- 1/2 cup Rice Milk (or plant-based alternative)
- 2 Tbsp Maple Syrup (or alternative sweetener)
- Optional Toppings: Mixed seeds, dried fruits, coconut, nuts etc
Preheat oven to 190 degrees fan-forced and prep your muffin tins.
Blend all ingredients together until well combined and evenly portion into your muffin tins.
Bake for approx. 13 minutes and allow to cool before enjoying the delicious Flourless Banana Muffin.
