Fig & Coconut Protein Balls Recipe

- 1/2 cup dried figs
- 1/3 cup plant-based protein powder
- 3/4 cup cashews
- 1/4 cup shredded coconut
- 1 Tbsp. coconut nectar
- 1 Tbsp. cacao powder
- 1 tsp. lime juice
Using the half cup to measure out your figs, fill with boiling water enough to cover the figs to pre-soak for 2 minutes.
In a blender or processor add all the ingredients until a coarse texture. If mixture is too wet add more cashews, if too dry add a little more water. You want the mixture to stick together between your fingers.
Roll into bite size balls and coat with some of the shredded coconut. Store in the raw fig and coconut protein balls in the fridge for up to 10 days.
