Sometimes a girl just wants to sit down and enjoy a delicious treat that makes you feel loved. Guess what? This is the one!! Double bonus is that I have also kept it super healthy too with mostly Low GI ingredients, making this little slice of heaven an addiction you do not have to feel guilty about.
The protein rich base is filled with plenty of plant goodness so your cells can thrive & the top layer providing fiber, antioxidants & overall mood boosting properties. It all sounds too perfect right…let’s get baking!
Dreamy Cashew & Chocolate Slice Recipe
Bake: 15mins | Refrigerate: 3-4 hrs | Serves: 25-30 approx
- 3/4 cup Cashews
- 1/2 cup Shredded Coconut
- 1/4 cup Seed Mix (sesame, sunflower, poppy seed, flaxseed)
- 2 Tbsp Maple Syrup
- 1 Egg white
- pinch of Himalayan Salt
- 80g Organic Dark Chocolate (I have used Green & Blacks 80%)
- 1 cup frozen or fresh Raspberries
- 1/4 Chia Seeds
- 1/4 hot water
Preheat your oven to 110-120ºC (fan forced) and line a small brownie tray with baking paper.
Starting with the base, process all ingredients together for approx. 20-30 seconds. This should now resemble a cookie dough texture which can be pressed out evenly into the brownie tray. Bake for approx. 15mins or until a light golden then set aside to cool.
In the same processor, add the berries, chia seeds & water until a smoothie texture has formed. Melt your chocolate in a bowl over a pot of hot water on the stove, stirring frequently (microwave can work but watch it closely). Once melted, add in your berry mix and stir until well combined.
Spread the topping over the cooked base and refrigerate for approx. 3-4hrs or overnight to ensure it has set properly. The chia seeds will create a gel consistency over time. Time to slice and serve your delicious, healthy cashew & chocolate slice.
