Crumbed Cauliflower & Zucchini Recipe
Prep 20min | Cook 25mins | Serves 4Ingredients: 1 Zucchini 2 cup Cauliflower 1/4 cup LSA mix 1/3 cup Quinoa flakes 1 Tbsp. Seasame seeds 1/4 cup Rice milk 1 egg 1 tsp. Dill *Optional Seasoning (chilli, pepper, parmesan cheese or pinch of salt) Method: Preheat oven to 180ºC. Line a roasting tray with baking paper. Wash vegetables. Cut zucchini into little fingers and separate cauliflower into bite size florets. In a small bowl whisk together egg and milk. In a small tray add LSA, Quinoa flakes and seasoning. Set up a production line to coat your veggies. First step is into your egg mix then coat well with the crumbing mix in a rolling motion. Finally place evenly spaced onto your roasting tray and bake for 20-25 mins until golden brown and veggies are softened. Serve with a protein such as lemon infused seafood or poultry.
