A little alternative to the traditional apple crumble with a lemon zest and added coconut tones to deconstruct all over your favourite fruit and yoghurt. With the nutritional benefits of more dietary fibre and plant-based protein is a sure way to keep you satisfied and lift your mood. Zesty Coconut Spice Crumble Recipe
Prep: 15mins Cook: 10-12mins Serves: 8
- 1 cup Oat Bran
- 1/2 cup Gluten Free Flakes (optional- brown rice/millet or quinoa. I used Planet Organics Porridge)
- 1/2 cup Coconut Flour
- 1/3 cup Coconut Sugar
- 150g butter
- 1 tsp Grated lemon Rind
- 1 Tbsp. Lemon Juice
- 1 tsp Mixed Spice
- 1 tsp bicarbonate of soda
- 3 Fruits of Choice
- 1 tsp Coconut Oil
Preheat oven to 160 degrees. Line a brownie tray with non-stick baking paper.
In a large bowl add coconut flour, oat bran, gluten free flakes and spice, stir together with a fork.
In a small saucepan, melt the butter and add in the coconut sugar. Take off the heat and stir in the bicarbonate of soda to form a froth.
Pour the wet mixture into the dry mixture and combine well using the back of a fork. Finally stir in your lemon.
Place the ingredients into the lined tray and press down firmly using the back of a fork or spatula until evenly spread.
Bake for 10-12 mins or until golden brown.
Allow to stand/cool in the tray for 15mins.
Heat up fruits of your pleasure, I used some sliced apples or pears with 1 tsp coconut oil and 1 Tbsp. water in a saucepan until soft, serve with some of the crumble and a generous dollop of Greek Yoghurt and sprinkle of cinnamon.
