I have created a Delicious Chocolate Chip Cookie to melt your heart and not tip you over the moderate balance of good vs evil food choices. I believe enjoyable home baked treats keeps a grounded peaceful food relationship running within you.
This chocolate chip biscuit is a bonus for those who are also looking for a simple & healthy gluten free recipe.
Chocolate Chip Cookie Recipe
- 1 cup Almond Meal
- 1/4 cup Coconut Flour
- 1/2 tsp Bicarb Soda
- pinch Sea Salt
- 1/3 cup Walnuts, crushed
- 50g Dark Chocolate 85% (I have used Organic Green & Blacks)
- 1/4 cup Rice Malt Syrup or Coconut Nectar
- 1/4 cup Butter (room temp)
- 1 egg (room temp)
Preheat oven to 180°c and line a cookie tray with baking paper.
In a large bowl electric beat the egg, butter and syrup for 1-2mins until fluffy. Add in your flours, bicarb and salt and combine well with a fork. Finally stir in the crushed chocolate & walnuts.
Shape out even balls onto your tray and flatten down with the back of your spoon. Bake for 12-14 minutes or until starts to golden on the surface. Allow to cookie to cool before enjoying with your favourite herbal tea.
