Roasted Cauliflower & Pine Nuts Green Salad Recipe
- 1 bag Baby French Kale or Spinach
- 1 Bunch Broccolini, chopped into 3cm sticks
- 1/2 Head of Cauliflower, broken into bite size florets
- 1 Green Apple, chopped into thin match sticks
- 2 TBSP Pine Nuts
- 1 TBSP EVOO (I have used Red Island EVOO)
- 1 TBSP Pickld Mint Seasoning Premium Blend
- 2 tsp Apple Cider Vinegar
- Pinch Sea Salt
Heat oil in a large fry pan on medium heat. Add in the seasoning and pine nuts and stir for 1 min.
Mix in the cauliflower florets, broccolini, sea salt and ACV then place a fry pan lid or plate on top to allow to heat through for another 3-5 minutes then set aside.
Prepare your serving plate with the leafy greens, apple match sticks and finish the plate generously with the Pickld seasoned veg and a light drizzle of EVOO.
