As we dive into the Winter months and the cooler weather it tends to bring along the cravings of warmth and hearty meals. With this in mind I created these earthy raw apricot bliss balls to have between meals instead of falling into the funnel of poor food choices. Meal preparation is valuable when trying to combat the mind telling you to buy a warm muffin with a lather of butter from the cafe down the road….STOP…..make my treats and then pour a nice warming brew of ginger tea….good bye cravings.
The sweetness comes from our lovely apricots containing iron and dietary fibre as well as the low GI rice malt syrup to keep the blood sugar levels balanced. The Loving Earth Buckinis are made from raw activated buckwheat and include a trail mix combination of caramelised buckinis, healthy nuts and berries.
Apricot Earthy Bliss Ball Recipe
Pre-soak 30mins | Prep 15 mins | Makes 20
- 1 cup dried sulphate free apricots
- 1/4 cup plant-based vanilla protein powder
- 1 cup almonds
- 1 cup Loving Earth Deluxe Buckinis (alternatives include additional nuts and seeds)
- 1 Tbsp. rice malt syrup (I used PureHarvest)
- 1/4 cup Chia Seeds (I used the The Chia Co)
- 1/2 tsp. Himalayan Salt
Measure out your dried apricots and fill with boiling water, enough to cover the apricots to pre-soak for 30 minutes. If you have not found sulphate free apricots – this step is crucial and can even pre soak for up to 1hr changing the boiled water if preferred.
In a blender or processor add all the ingredients and blitz until a coarse binding texture. You want the mixture to stick together between your fingers. Taste your ingredients and add additional quantities if needed.
Roll your apricot mixture into raw bliss balls (size a little smaller then a ping pong) and store in the fridge for up to 10 days or pop into the freezer.
