Eating healthy does not mean you have to deprive yourself of flavour. This Roasted Almond & Salmon Salad is so simple and can be whipped up for lunch and enjoyed with a lasting taste of satisfaction. Salmon is a great source of healthy Omega fats and Protein and the simple crunch from celery and almonds makes a fancy nutritious lunch experience. Lemon is very cleansing and paired with avocado and seafood is a match made in heaven. If you want to be extra creative, my Rosemary & Coconut Sweet Potato Chips on the side will complete the picture for something a little more substantial.
- 100g smoked salmon
- 15 roasted almonds
- 1 celery stick
- 2 cups baby spinach
- 2 Tbsp. Avocado
- 1/4 of a lemon (juice dressing)
- Dill & Pepper seasoning (optional)
I like to warm my salmon through in a little fry pan but you do not have to do this if you enjoy it raw.
Simply slice your celery and avocado then chop the roasted almonds and gently toss everything in your bowl with a squeeze of lemon and seasoning to finish.
